Don't confuse the baking and drying of coffee

Coffee berries grow on trees 8 to 10 feet tall. They are trimmed to this height because they can be better grown when trimmed, and because berries are easier to collect from the bush than from the tree. In the wild, the coffee tree can grow up to 30 feet tall. These berries look like crimson cherries, and the inside of the flesh is made up of two oval flat beans, which are covered by two thin husks.

As you can see, the drying process is not easy. After the berries were picked, the flesh was chopped and the seeds were washed in large buckets. The flesh is useless, then the seeds are released and dried, and the green beans are placed on the concrete floor to dry in the sun.

Drying coffee is an art. The seeds must be tumbling over the coffee fruit in a timely manner so that the back of the face is evenly heated to be evenly dried. The dry floor must then be covered every night to prevent moisture. If there is a shower, the canvas must be placed on the floor immediately.

Don't confuse the baking and drying of coffee. Green coffee beans are dried during transport and are usually baked in the country where they are sent. On the west side of Lower Manhattan, there are many coffee importers' factories. Here, the coffee is baked and the different brands are graded and placed in a package or bag. The streets of this area exude a strong roast coffee flavor.
